Spiced poached pears

1 L (4 cups) water           

15 ml (1 tablespoon) sugar

5 ml (1 teaspoon) powdered cinnamon

5 ml (1 teaspoon) vanilla

10 ml (2 teaspoons) orange zest

2 whole star anise

2 pears, peeled and halved lengthwise

30 ml (2 tablespoons) light ricotta           

30 ml (2 tablespoons) orange juice

10 ml (2 teaspoons) dried raisins             

15 ml (1 tablespoon) crushed hazelnuts

5 ml (1 teaspoon) honey

  • In a saucepan, combine water, sugar, cinnamon, vanilla, orange zest and star anise. Bring to a boil until the liquid thickens to a syrup consistency.
  • Add the pears and poach for about 30 minutes, turning gently halfway through cooking time. Drain and set aside.
  • Mix the ricotta, orange juice, dried raisins and crushed hazelnuts.
  • Arrange the pears on a plate and garnish with the ricotta mixture. Drizzle with honey.

Variation: Replace the star anise with cloves.
