2 diced apples

Oil spray

30 mL (2 tbsp.) brown sugar

85 mL (⅓ cup) light ricotta cheese (less than 5% fat)

4 small eggs

200 mL (¾ cup + ½ tbsp.) whole wheat flour

200 mL (¾ cup + ½ tbsp.) 1% milk

5 mL (1 tsp.) cinnamon

  • Brown the diced apples in a hot pan sprayed with oil.
  • Add the brown sugar and caramelize.
  • Mix the apples with the ricotta cheese. Set aside in a cool place.
  • Whisk together the eggs, flour, milk, and cinnamon until the batter is smooth.
  • Cook in a pan sprayed with oil over medium heat.
  • Top your crepe with the apple ricotta mixture and fold.
