Nut-Free Homemade Cereal Bars

Ingredients

  • 2 teaspoons (10 ml) Canola oil
  • 2 tablespoons + 1 teaspoon (40 ml) Maple syrup
  • 1/3 cup (75 ml) coconut milk
  • 1/2 cup (125 ml) oatmeal
  • 3 tablespoons (45 ml) whole wheat flour
  • A pinch each: baking soda, salt, cinnamon, cardamom
  • 1/2 cup (125 ml) dried cranberries, chopped

Directions

  1. Preheat oven at 400°F (200 °C).

  2. In a large bowl combine oil, maple syrup, and coconut milk.

  3. Add all other ingredients and stir until all ingredients are moistened.

  4. Spread mixture on a non-stick cookie sheet or on a cookie sheet lined with parchment paper. Cook in the oven for approximately 15 minutes.

  5. Cool before eating.
