Ingredients

  • 2 Rice paper sheets
  • 1/2 Apple, grated
  • 1/2 Orange, supremed
  • 2 Mint leaves, minced
  • 1/4 cup (60 ml) Raspberries

Directions

  1. Soak the rice paper in a bowl of hot water for a few seconds and place on a damp tea towel.
  2. Mix grated apple, supremed orange, and minced mint. Spread half the mixture in a straight line a third of the way from the ends of a sheet of rice paper, leaving 2.5 cm (1") on either side.
  3. Fold the sides in and roll up tightly. Repeat for the second wrap.
  4. Mix the raspberries and crush them to make a coulis.
  5. Serve wraps drizzled with raspberry coulis.
