Directions
Heat the oil in a saucepan. Sweat the onion, carrots, celery and garlic about 7 minutes or until the vegetables release their aroma and are tender.
Add the water, potato, tomatoes and herbs, and then season. Bring to a boil, lower the heat and simmer about 30 minutes or until the vegetables are cooked.
Add the zucchini and the beans and continue cooking for 5 minutes or until the zucchini is tender.
