Ingredients

    • 5 ml (1 tsp.) olive oil
    • 1/4 chopped onion
    • 80 ml (1/3 cup) diced carrots
    • 80 ml (1/3 cup) diced celery
    • 1 chopped garlic clove
    • 375 ml (1 1/2 cup) water
    • 1 small peeled potato, diced
    • 1/2 540 ml/19 oz can of diced tomatoes
    • 1 bay leaf
    • 2.5 ml (1/2 tsp.) dried basil
    • 2.5 ml (1/2 tsp.) dried oregano
    • Salt and pepper to taste
    • 1 diced zucchini
    • 1/2 540 ml/19 oz can of white or red beans, washed and drained

Directions

  1. Heat the oil in a saucepan. Sweat the onion, carrots, celery and garlic about 7 minutes or until the vegetables release their aroma and are tender.
  2. Add the water, potato, tomatoes and herbs, and then season. Bring to a boil, lower the heat and simmer about 30 minutes or until the vegetables are cooked.
  3. Add the zucchini and the beans and continue cooking for 5 minutes or until the zucchini is tender.
  4. Adjust the seasoning as needed.
