Hummus - Beets Hummus by Jonathan Garnier

  • 500 ml (2 cups) chickpeas, cooked
  • 100 ml (3/8 cup) sesame seeds pureed (Tahini)
  • 1 garlic clove, peeled
  • 80 ml (1/3 cup) lemon juice
  • 125 ml (1/2 cup) olive oil
  • 80 ml (1/3 cup) water
  • 3 ml (1/2 tsp) salt or to taste
  • 5 ml (1 tsp) pepper or to taste
  • 250 g (9 oz) beets peeled, cooked and diced (optional)


In a food processor, mix all the ingredients until smooth. Rectify seasoning if needed.

Enjoy with pita bread, nachos or to dip vegetables.

NB : Make sure the tahini is well mixed before use. (no oil on top).

Fot the beets hummus, incorporate the beets while mixing all the other ingredients.
