Ingredients

  • 20 ml (2 tsp.) olive oil
  • 250 ml (1 cup) finely-chopped onion
  • 250 ml (1 cup) diced carrots
  • 8 ml (2 tsp.) dried thyme
  • 1 l (4 cups) low-sodium chicken broth
  • 180 ml (2/3 cups) stewed tomatoes (canned)
  • 120 ml (8 tbsp.) dried lentils
  • 60 ml (4 tbsp.) fresh parsley
  • To taste salt and pepper

Directions

  1.  In a pot, brown the onion and carrots in oil.
  2. Add thyme and blend in broth, tomatoes, lentils, salt and pepper.
  3. Simmer approximately 45 minutes, until lentils are tender.
  4. Garnish with parsley and serve.
