Ingredients

  • 1/2 Onion, chopped
  • 1/2 Potato, peeled and diced
  • 2 cups of chicken broth
  • 1 stalk of celery, diced
  • 1/4 cup of green beans cut into 1 cm pieces
  • 1/4 cup of spinach, shredded
  • 1 Carrot, grated
  • 1/2 Red pepper, chopped
  • 1/2 teaspoon Fresh dill, chopped
  • 9 or 10 oz. Red beans, drained
  • Salt, pepper and Cayenne pepper to taste

Directions

  1. In a large casserole, pour chicken broth, add onions and potatoes.
  2. Bring to a boil. Reduce heat and let simmer for 10 minutes.
  3. Add to it the celery, green beans and red beans, spinach, carrot, red pepper and dill.  
  4. Cover and simmer for another 10 minutes, or until vegetables are cooked and tender.
  5. Add salt, pepper and Cayenne pepper to taste.

    For a complete meal, add proteins such as chicken or shrimps to the soup itself, add cheese as a side, or a fat free yogurt as desert. Add cereal products such as pasta or rice to the soup, or bread or crackers to accompany the soup.
