In a bowl, combine first five ingredients, add the chicken thighs. Leave to marinate for at least 6 hours;
Preheat oven at 180⁰C (350⁰F);
Prepare the sauce, mixing together other ingredients. Cook in micro-wave oven for a few seconds, whisk until smooth. Keep aside;
Cook chicken in the oven, on a baking sheet lined with parchment paper, for about 30 minutes, or until a meat thermometer inserted in the center of the meat shows 82 °C (180 °F).
Spread peanut butter sauce over chicken thighs and serve.
