Chicken in peanut sauce

  • 1 clove garlic, finely minced
  • 5 ml (1 teaspoon) ground cumin or cilantro
  • 1 ml (¼ teaspoon) turmeric
  • 5 ml (1 teaspoon) canola oil
  • Juice from ½ lemon
  • 180 g (6 oz.) boneless, skinless chicken thighs
  • 25 ml (5 teaspoon) natural peanut butter
  • 2,5 ml (½teaspoon) honey
  • 2,5 ml (½ c. teaspoon) soy sauce
  • Sambal Oelek or pepper flakes, to taste
  • 45 ml (3 tablespoon) water

  1. In a bowl, combine first five ingredients, add the chicken thighs. Leave to marinate for at least 6 hours;
  2. Preheat oven at 180⁰C (350⁰F);
  3. Prepare the sauce, mixing together other ingredients. Cook in micro-wave oven for a few seconds, whisk until smooth. Keep aside;
  4. Cook chicken in the oven, on a baking sheet lined with parchment paper, for about 30 minutes, or until a meat thermometer inserted in the center of the meat shows 82 °C (180 °F).
  5. Spread peanut butter sauce over chicken thighs and serve.
