Caramelized Mango & Chocolate Pancakes

Ingredients

Pancakes
  • 1/3 cup + 4 teaspoon whole wheat flour
  • 1/3 cup + teaspoon low-fat milk
  • 1 egg
Garnish
  • 1/2 diced mango
  • 1 or 2 teaspoon(s) sugar
  • ½ or 1 teaspoon(s) vanilla extract
  • 1 or 2 tablespoon(s) dark chocolate chips

Directions

  1. In a bowl, mix together the egg and flour. Gradually add milk and whisk together avoiding lumps from forming.
  2. Cook pancakes in a non-stick pan.
  3. In a warmed-up pan, brown mango pieces. Add vanilla and sugar. Let caramelize.
  4. Add chocolate chips and let melt for 2 minutes.
  5. Pour mango-chocolate mixture on pancakes.

Rendering: 2 servings (2 pancakes)
