Broccoli Flan

  • 5 ml (1 tsp) butter or non-hydrogenated margarine
  • 4 eggs
  • 375 ml (1 ½ cups) cooked and drained broccoli
  • 80 ml (1/3 cup) cottage cheese, 1% m.f.
  • 30 ml (2 tbsp) light grated cheese, ˂ 18% m.f.
  • Salt and pepper to taste

  1. Preheat the oven to 200 °C (400 °F).
  2. Grease a small baking dish or individual molds (two per person).
  3. In a small bowl, beat the eggs.
  4. In a larger bowl, lightly mash the broccoli with a fork; add the cottage cheese and the beaten eggs.
  5. Add the grated cheese and pour into the baking dish or molds.
Bake for 25 to 30 minutes.

* Variation: Replace the broccoli with finely chopped kale.
