Unsweetened Pear and Apple Molten Cake

375 mL (1 1/2 cups) flour

60 mL (1/4 cup) rolled oats

7.5 mL (1/2 tbsp.) baking powder

125 mL (1/2) unsweetened applesauce

45 mL (3 tbsp.) canola oil

125 mL (1/2 cup) milk

1 egg

1 pear, peeled, cored and grated

Zest of 1 lemon

30 mL (2 tbsp.) coarsely chopped hazelnuts

Preheat the oven to 180 °C (350 °F).
  1. Line a cake pan with parchment paper protruding from each side.
  2. Pour flour, rolled oats and baking powder into a bowl.
  3. In a separate bowl, combine applesauce, milk, egg, pear and lemon zest.
  4. Mix dry and wet ingredients until batter is smooth, without overmixing.
  5. Pour batter into cake pan and top with hazelnuts.
  6. Bake for about 45 minutes or until the tip of a knife inserted between the edge and the centreof the cake comes out clean.
