Ingredients

INGREDIENTS (for 1 person)

 

For the scrambled tofu:

  • ¼ block of firm tofu, crumbled
  • A few mushrooms, finely chopped
  • ¼ bell pepper, finely chopped
  • ¼ green onion, minced
  • ⅛ tsp of turmeric
  • ¼ tsp paprika
  • ¼ tsp oregano
  • 1 tbsp nutritional yeast
  • 3 tbsp unsweetened soy milk
  • Salt and pepper, to taste

 

For the burrito:

  • 1 large flour tortilla
  • Avocado
  • Fauxmage (to taste, optional)

* Fauxmage is vegan cheese, which means it does not contain any dairy or other animal products.

  • Salsa

Directions

INSTRUCTIONS

  1. In a skillet, brown the tofu in oil.
  2. Add the vegetables and cook for a few minutes until they are grilled.
  3. Add the spices, stir to incorporate, and cook for 1 minute.
  4. Add the nutritional yeast, stir to incorporate, and turn off the burner.
  5. Add the soy milk and stir.
  6. Place the scrambled tofu and avocado (and fauxmage if using) in the tortilla. Roll the burrito and grill in a panini press or skillet.
  7. Serve with salsa. <3
