INGREDIENTS (for 1 person)
For the scrambled tofu:
- ¼ block of firm tofu, crumbled
- A few mushrooms, finely chopped
- ¼ bell pepper, finely chopped
- ¼ green onion, minced
- ⅛ tsp of turmeric
- ¼ tsp paprika
- ¼ tsp oregano
- 1 tbsp nutritional yeast
- 3 tbsp unsweetened soy milk
- Salt and pepper, to taste
For the burrito:
- 1 large flour tortilla
- Avocado
- Fauxmage (to taste, optional)
