Ingredients

I love this recipe featuring seasonal Quebec vegetables. It’s easy to make and packed with protein and vitamins!

2 eggplants, finely diced

3 apples, diced

1 zucchini, diced

½ onion, chopped

1 clove of garlic, minced

10 mL (2 tsp.) olive oil

8 eggs

100 g mozzarella balls, halved

Fresh basil leaves

Salt and pepper

Directions

 

  1. Preheat oven to 200 °C (400 °F).
  2. Line a baking sheet with parchment paper.
  3. Spread out vegetables on sheet. Add oil. Season with salt and pepper.
  4. Bake for approximately 15 minutes, stirring occasionally.
  5. Remove sheet from oven and crack eggs, covering the vegetables.
  6. Place mozzarella halves on top. Season with salt and pepper.
  7. Continue baking for 7 minutes.
  8. Garnish with basil leaves and serve. Enjoy!
