Healthy Cookies with Nuts, Cranberries & Chocolate Milk

 

INGREDIENTS

  • 2 cups large-flake rolled oats
  • ¾ cup all purpose flour
  • 1 tsp. baking powder
  • 1 tsp. ashwagandha powder (optional)
  • ½ tsp. maca root powder (optional)
  • ½ tsp. ground cinnamon
  • ¼ tsp salt
  • ⅓ cup chocolate milk
  • ⅓ cup maple syrup
  • ¼ cup butter, melted
  • 1 large egg
  • 1 tsp. pure vanilla extract
  • ½ cup chocolate chips
  • ⅓ cup dried cranberries
  • ⅓ cup chopped nuts (walnuts, pecans, almonds, etc.)

 

  1. Preheat the oven to 180 °C (350 °F). Line two large cookie sheets with parchment paper. Set aside.
  2. In a large bowl, mix the oats, flour, baking powder, ashwagandha powder, maca root powder, cinnamon, and salt.
  3. Add chocolate milk, maple syrup, melted butter, egg, and vanilla extract. Mix well until dough is evenly blended. Let rest for 10 minutes, then add chocolate chips, dried cranberries, and chopped nuts.
  4. Using a large spoon, roll dough into 14 balls and place on the cookie sheet, leaving spaces in between. Flatten the dough balls using the palm of your hand (moisten hand slightly to prevent dough from sticking).
  5. Bake cookies for 12–14 minutes, rotating the cookie sheet after 8 minutes. Remove cookie sheets from the oven and let cool for a few minutes before transferring cookies to a cooling rack.
