Chocolate Milk Energy Balls

Ingredients

  • ¾ cup raw unsalted almonds
  • ¼ cup regular rolled oats
  • 1 tbsp. chia or flax seeds
  • 1 cup Medjool dates, pitted (approximately 8–10 dates)
  • ¼ cup chocolate milk
  • 1 tbsp. cocoa or carob powder
  • 1 tbsp. maple syrup
  • ¼ tsp. ground cinnamon
  • ⅛ tsp. salt
  • Cocoa powder or unsweetened shredded coconut, for coating (optional)

  1. In a food processor, blend almonds, oatmeal, and chia or flax seeds into a coarse meal, keeping a few small pieces. Add the remaining ingredients.
  2. Blend until the mixture reaches a consistent, sticky paste. Scrape the sides of the bowl with a silicone spatula, if necessary.
  3. With slightly wet hands, form approximately 14 balls. Roll in cocoa powder or shredded coconut to coat, if desired. Store energy balls in an airtight container in the fridge for up to one week.

Suggestion

Variation: For a nut-free version, use pumpkin seeds. Tip: Make different-sized energy balls to satisfy any appetite!
