Chocolate Milk and Avocado Holiday Brownies

 

INGREDIENTS

2.6 oz. 70% dark chocolate, broken into pieces

⅔ cup all-purpose flour

¼ cup cocoa powder

½ tsp. baking powder

¼ tsp. salt

1 very ripe avocado, puréed until smooth

½ cup golden cane sugar

½ cup chocolate milk

½ cup walnuts, in pieces (optional)

  1. Preheat the oven to 180 °C (350 °F). Grease a 20 x 20 cm square cake pan.Line the bottom of the pan with a square of parchment paper. Set aside.
  2. Put the dark chocolate in a small bowl. Melt it in a double boiler or in the microwave at medium power for 1 to 2 minutes. Let cool.
  3. In a bowl, mix the flour, cocoa, baking powder, and salt. Set aside.
  4. In the bowl of a stand mixer fitted with a flat beater attachment, mix the avocado purée and sugar for 5 minutes. Use a spatula to scrape the sides of the bowl if necessary.
  5. Add the chocolate milk and mix.
  6. Add the flour and cocoa mixture. Mix. Add the melted dark chocolate. Mix well until the batter is smooth. Add the walnuts. Mix.
  7. Pour the batter into the prepared cake pan. Smooth out the surface using a spatula.
  8. Bake for 30 minutes or until a toothpick inserted in the centre of the cake comes out clean and dry. Let cool before removing it from the pan and cutting into squares.

SUGGESTION

You can substitute walnuts with hazelnuts or almonds.
